This classic peach pie is made with fresh, juicy peaches and baked in a flaky double crust. Optional raspberry or blackberry sauce adds a fruity, tangy twist for an extra-special summer dessert.

For the Filling:
- 5 to 6 cups fresh peaches, peeled and sliced
- 1 tablespoon lemon juice
- 1 cup sugar
- ¼ cup cornstarch
- ¼ teaspoon nutmeg
- ¼ teaspoon salt
For the Crust:
- 2 pie crusts (homemade or store-bought, for top and bottom)
Optional Raspberry or Blackberry Sauce:
- ¼ cup sugar
- 1 tablespoon cornstarch
- ½ cup berry juice (from thawed frozen berries)
- 1 bag thawed raspberries or blackberries
- ½ teaspoon almond extract
Instructions
- Preheat Oven: Set oven to 400°F (200°C).
- Prepare the Crust: Roll out the bottom pie crust into a 9-inch pie pan and chill while preparing the filling.
- Make the Filling: In a large bowl, toss peach slices with lemon juice. Add sugar, cornstarch, nutmeg, and salt. Stir gently to combine.
- Assemble the Pie: Spoon the peach mixture into the chilled bottom crust. Top with second crust or create a lattice. Seal edges and flute. Cut slits in the top to allow steam to escape.
- Bake: Bake for 35–45 minutes until the crust is golden brown and the filling is bubbling. Cover the edges with foil after 20 minutes to prevent over-browning.
- Cool: Let the pie cool for at least 1 hour before slicing to allow the filling to set.
- Optional Berry Sauce: In a saucepan, whisk sugar and cornstarch. Stir in berry juice and cook until thickened. Add berries and almond extract. Let cool, then spoon over individual pie slices when serving.
Notes
If using frozen peaches, thaw and drain before using. The optional berry sauce is great for elevating presentation or adding a tart contrast. Serve with vanilla ice cream for extra indulgence.
