Description

Delightful pralines made from Speculoos cookies, creamy peanut butter, and rich dark chocolate, perfect for the Christmas season.


Ingredients

  • 250 g Gewürz-Spekulatius
  • 200 g peanut butter
  • 200 g dark chocolate
  • 5 g coconut fat
  • Zest of one organic orange
  • Coarse sea salt

Instructions

  1. Finely crush 250 g of Gewürz-Spekulatius using a food processor or blender.
  2. Add 200 g of peanut butter and the zest of one organic orange to the crushed cookies. Mix to form a sandy and oily dough.
  3. Take portions of the dough (about 10 g each) and roll them into small balls.
  4. Place the balls in the refrigerator for at least one hour to chill.
  5. Once chilled, roll the balls gently to make them smooth and round.
  6. Melt 200 g of dark chocolate with 5 g of coconut fat in a water bath, stirring to combine.
  7. Use a praline fork to dip each ball into the chocolate and place them on a cooling rack.
  8. Sprinkle coarse sea salt on top and let them dry completely, preferably overnight.
  9. Store the finished pralines in small paper cups in an airtight container in a cool place.

Notes

For a smoother texture, ensure peanut butter is well mixed. Use high-quality chocolate for a richer taste. Can substitute peanut butter with almond butter.
