Ingredients

  • All-purpose flour: 2 cups
  • Baking powder: 2 teaspoons
  • Baking soda: 1 teaspoon
  • Salt: 1/2 teaspoon
  • Ground cinnamon: 1 1/2 teaspoons
  • Ground nutmeg: 1/2 teaspoon
  • Ground cloves: 1/4 teaspoon
  • Ground ginger: 1/4 teaspoon
  • Granulated sugar: 1 cup
  • Packed brown sugar: 1 cup
  • Unsalted butter (melted): 1 cup
  • Large eggs: 4
  • Pure pumpkin puree: 1 can (15 oz)
  • Vanilla extract: 2 teaspoons
  • For the Cream Cheese Frosting:
  • Unsalted butter, softened: 1/2 cup
  • Cream cheese, softened: 8 oz
  • Powdered sugar: 4 cups
  • Vanilla extract: 1 teaspoon
  • A pinch of salt

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, whisk together the all-purpose flour, baking powder, baking soda, salt, cinnamon, nutmeg, cloves, and ginger.
  3. In another bowl, beat together the granulated sugar, brown sugar, and melted butter until smooth and creamy.
  4. Add eggs one at a time, ensuring they are well incorporated.
  5. Stir in vanilla extract and pumpkin puree, mix until well combined.
  6. Fold in the dry ingredients, mixing just until no streaks of flour remain. Do not overmix.
  7. Pour the batter into a greased and floured baking pan, smoothing the top with a spatula.
  8. Bake for 45-50 minutes, or until a toothpick inserted into the center of the cake comes out clean.
  9. Allow the cake to cool in the pan for about 10 minutes before transferring it to a cooling rack to cool completely.
  10. For the frosting: Beat together softened butter, cream cheese, and vanilla extract. Gradually add powdered sugar until the mixture is smooth and creamy.
  11. Once the cake is completely cool, spread the cream cheese frosting over the top and sides of the cake.
  12. Optionally, sprinkle a pinch of cinnamon over the frosting or add a crumb topping for a rustic look.
  13. Slice and serve with a warm cup of cider or tea.

Notes

  • Ensure you use pure pumpkin puree, not pie filling, for the best flavor balance.
  • Adjust the ground spices to customize the flavor to your liking.
  • Consider using chocolate chips or chopped nuts for extra texture.
  • For easy removal, line your cake pan with parchment paper.
