Description

A delightful twist on the classic Shepherd’s Pie, packed with nutritious ingredients and flavorful spices.


Ingredients

  • 1 pkg ButcherBox Ground Beef
  • 1 cup butternut squash (small dice)
  • 1 cup carrots (small dice)
  • 1 cup peas (if frozen, do not thaw)
  • 1 (15.5 oz) can garbanzo beans (rinsed and drained)
  • 1 (14.5 oz) can diced tomatoes
  • 1 medium yellow onion (small dice)
  • 4 cloves garlic (minced)
  • ½ teaspoon cinnamon
  • 1 teaspoon muchi curry powder
  • 1 teaspoon garam masala
  • 1 tablespoon tomato paste
  • 2 teaspoons kosher salt
  • ⅓ cup beef stock
  • 1 head cauliflower
  • 2 sweet potatoes
  • ½ teaspoon coarse ground black pepper
  • 1 teaspoon ghee

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Cut the cauliflower and sweet potatoes into small pieces and steam until tender.
  3. In a large skillet, heat the ghee over medium heat. Add in the diced onion and garlic, cooking until softened.
  4. Add the ground beef to the skillet, browning it along with the onion and garlic.
  5. Stir in the diced butternut squash, carrots, peas, garbanzo beans, diced tomatoes, and all the spices (cinnamon, muchi curry powder, garam masala, tomato paste, and kosher salt). Pour in the beef stock and simmer for about 10 minutes.
  6. Mash the steamed cauliflower and sweet potatoes together, seasoning with salt and pepper to taste.
  7. In a baking dish, spread the beef and vegetable mixture evenly. Top with the mashed cauliflower and sweet potatoes, smoothing it out.
  8. Bake for 25-30 minutes until hot and slightly golden on top.

Notes

Feel free to mix and match vegetables based on what you have. Adjust spices to your liking for extra heat.
