Ingredients

- 8 oz noodles (spaghetti, rice noodles, or soba)
- 3 tbsp soy sauce or tamari
- 2 tbsp chili paste (sambal oelek, gochujang, or preferred chili sauce)
- 2 tbsp sesame oil
- 1 tbsp olive oil
- 5 garlic cloves, minced
- 1 tbsp rice vinegar or lime juice
- 1 tbsp honey or maple syrup (optional)
- Chopped scallions, sesame seeds, sliced chili peppers for garnish
Instructions
- Cook the noodles according to package directions until al dente. Drain and set aside.
- Heat olive oil and sesame oil in a skillet over medium heat. Sauté the minced garlic until fragrant and just starting to turn golden — about 30–60 seconds.
- Stir in the chili paste, soy sauce, rice vinegar (or lime juice), and honey (if using). Let the sauce simmer for 1–2 minutes.
- Toss the cooked noodles in the skillet with the sauce until fully coated and heated through. If the sauce seems too thick, add a tablespoon or two of the noodle cooking water to loosen it.
- Garnish generously with chopped scallions, sesame seeds, and fresh sliced chili peppers. Serve hot.
Notes
Use high-quality chili paste for the best flavor. Reserve noodle cooking water to help emulsify the sauce.
