Ingredients

  • 1 lb Ground Beef or Turkey
  • 2 cups Fresh Spinach, sautéed
  • 4 cloves Garlic, minced
  • 1 small Onion, finely chopped (optional)
  • 1 large Egg
  • 1 cup Breadcrumbs (or oats/almond flour)
  • 1/2 cup Grated Parmesan Cheese
  • 8 oz Low-Moisture Mozzarella Cubes, chilled
  • 1 tbsp Italian Seasoning
  • Salt, to taste
  • Pepper, to taste
  • 1/2 tsp Red Pepper Flakes
  • 1 tbsp Chopped Parsley

Instructions

  1. Sauté garlic and spinach in a skillet until fragrant.
  2. In a large bowl, combine beef, sautéed spinach, garlic, onion, egg, breadcrumbs, cheese, seasoning, salt, pepper, and red pepper flakes.
  3. Form mixture into meatballs and place on a baking sheet.
  4. Bake at 400°F (200°C) for 20-25 minutes until cooked through.
  5. Serve warm, garnished with parsley.
