- 1 lb Ground Beef or Turkey
- 2 cups Fresh Spinach, sautéed
- 4 cloves Garlic, minced
- 1 small Onion, finely chopped (optional)
- 1 large Egg
- 1 cup Breadcrumbs (or oats/almond flour)
- 1/2 cup Grated Parmesan Cheese
- 8 oz Low-Moisture Mozzarella Cubes, chilled
- 1 tbsp Italian Seasoning
- Salt, to taste
- Pepper, to taste
- 1/2 tsp Red Pepper Flakes
- 1 tbsp Chopped Parsley
Instructions
- Sauté garlic and spinach in a skillet until fragrant.
- In a large bowl, combine beef, sautéed spinach, garlic, onion, egg, breadcrumbs, cheese, seasoning, salt, pepper, and red pepper flakes.
- Form mixture into meatballs and place on a baking sheet.
- Bake at 400°F (200°C) for 20-25 minutes until cooked through.
- Serve warm, garnished with parsley.
Notes
Remember to drain the spinach well and chill the cheese for best results.
