Description

A warm, cheesy chicken breast stuffed with bright spinach and cream cheese, perfect for a special weeknight dinner.


Ingredients

  • 1 teaspoon garlic powder
  • 1 teaspoon coarse salt
  • 1 teaspoon pepper
  • 1.5 lbs boneless, skinless chicken breast (~4 breasts)
  • 3 tablespoons olive oil, separated
  • ½ medium white onion, thinly sliced
  • 5 oz fresh spinach
  • 6 oz cream cheese, cold

Instructions

  1. In a bowl, mix spinach, cream cheese, garlic powder, salt, and pepper.
  2. Butterfly the chicken breasts and pound to even thickness.
  3. Stuff the spinach mixture into the chicken pockets and secure with toothpicks.
  4. Heat 1 tablespoon of olive oil in a pan and sear chicken for 4-5 minutes on each side.
  5. Transfer to an oven-safe dish and bake at 375°F (190°C) for 20-25 minutes.
  6. Let rest for 5 minutes before serving.

Notes

To keep the filling creamier, let the cream cheese sit at room temperature for 5–10 minutes before mixing.
