A warm, cheesy chicken breast stuffed with bright spinach and cream cheese, perfect for a special weeknight dinner.
Ingredients

- 1 teaspoon garlic powder
- 1 teaspoon coarse salt
- 1 teaspoon pepper
- 1.5 lbs boneless, skinless chicken breast (~4 breasts)
- 3 tablespoons olive oil, separated
- ½ medium white onion, thinly sliced
- 5 oz fresh spinach
- 6 oz cream cheese, cold
Instructions
- In a bowl, mix spinach, cream cheese, garlic powder, salt, and pepper.
- Butterfly the chicken breasts and pound to even thickness.
- Stuff the spinach mixture into the chicken pockets and secure with toothpicks.
- Heat 1 tablespoon of olive oil in a pan and sear chicken for 4-5 minutes on each side.
- Transfer to an oven-safe dish and bake at 375°F (190°C) for 20-25 minutes.
- Let rest for 5 minutes before serving.
Notes
To keep the filling creamier, let the cream cheese sit at room temperature for 5–10 minutes before mixing.
