Description

Ingredients

  • 2 and 3/4 cups all purpose flour
  • 1/2 teaspoon salt
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/3 cup granulated sugar
  • 1 stick (4 ounces) unsalted butter, very cold and cut into tiny pieces
  • 1 large egg
  • 1/2 cup whole milk
  • 2 tablespoons heavy cream
  • 1 cup fresh strawberries, hulled and quartered
  • 1 large egg, beaten
  • 1 teaspoon water
  • 2 tablespoons sugar for sprinkling
  • 3/4 cup confectioners sugar

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper. Hull and quarter your fresh strawberries, then set aside.
  2. In a large mixing bowl, whisk together the flour, granulated sugar, baking powder, baking soda, and salt until combined.
  3. Add the cubed cold butter to the dry ingredients and work it into the flour until it resembles coarse crumbs with some pea-sized pieces of butter left.
  4. Gently fold in the quartered strawberries until evenly distributed.
  5. In a separate bowl, whisk together the egg, whole milk, and heavy cream. Pour this mixture into the flour-strawberry mixture and gently mix until just combined.
  6. Turn the dough out onto a floured surface and knead gently a couple of times to bring it together. Pat or roll the dough into a 1-inch thick round or square, then cut into 8 or 12 wedges or use a round cutter.
  7. Transfer the cut scones to the baking sheet, leaving space between them. Brush the tops with the egg wash (beaten egg mixed with water) and sprinkle with sugar.
  8. Bake for 15 to 18 minutes until golden brown. Transfer to a wire rack to cool slightly.
  9. Serve warm or at room temperature, dusted with confectioners sugar or with a simple glaze made from sugar and milk.

Avoid overmixing the dough to ensure flaky scones. Always chill the butter before baking.
