  • 2 tablespoons granulated sugar
  • 32 ounces softened cream cheese
  • 1 ½ cups granulated sugar
  • 1 teaspoon vanilla extract
  • ½ teaspoon almond extract (optional)
  • 4 large eggs
  • ½ cup heavy cream
  • 1 box (3.4 ounces) strawberry gelatin powder
  • 1 cup all-purpose flour
  • ½ cup granulated sugar
  • ½ cup cold, cubed unsalted butter
  • 1 cup coarsely crushed Golden Oreo cookies
  • 1 pound hulled and sliced fresh strawberries
  • ¼ cup granulated sugar
  • 1 tablespoon lemon juice

Instructions

  1. Preheat oven to 350°F (175°C). Combine crushed Oreos, melted butter, and sugar in a mixing bowl. Press into a 9-inch springform pan and bake for 8-10 minutes.
  2. Beat cream cheese until smooth, gradually add sugar, then mix in vanilla and almond extract. Add eggs one at a time and gently stir in cream.
  3. Pour cheesecake filling over cooled crust and tap to release air bubbles. Bake for 55-70 minutes until edges are set and center jiggles slightly. Cool in the oven with the door ajar for an hour, then refrigerate for at least 4 hours.
  4. Mix strawberry gelatin, flour, and sugar in a bowl. Cut in butter, then add crushed Oreos. Spread on a baking sheet and bake for 8-10 minutes until golden. Cool and break into pieces.
  5. In a saucepan, combine strawberries, sugar, and lemon juice. Cook for 10-15 minutes until softened, then simmer until thickened. Cool completely.
  6. Remove cheesecake from the pan, spread topping over, and drizzle with the strawberry sauce if desired. Slice and serve.

Notes

For best results, let cheesecake cool slowly and refrigerate overnight. Serve with fresh strawberries or mint leaves for garnish.
