- 1 box yellow cake mix
- 4 large eggs
- 3/4 cup vegetable oil
- 1 cup sour cream
- 1/2 cup brown sugar
- 1 tablespoon ground cinnamon
- 1 cup chopped strawberries
- 1/2 cup powdered sugar
- 1/4 cup heavy cream
Instructions
- Preheat your oven to 350°F (175°C). Grease and lightly flour a 9×13-inch baking pan.
- In a large mixing bowl, combine the yellow cake mix, eggs, vegetable oil, and sour cream. Beat until smooth.
- In a small bowl, mix brown sugar and cinnamon.
- Gently fold chopped strawberries into the batter.
- Pour half the batter into the pan, sprinkle with the cinnamon mixture, then add the remaining batter. Swirl gently with a knife.
- Bake for 30-35 minutes or until a toothpick comes out with a few moist crumbs.
- Cool the cake in the pan for 10 minutes, then transfer to a rack.
- For the icing, whisk powdered sugar and heavy cream in a bowl until smooth. Spread over the cooled cake.
Notes
For added flavor, consider folding strawberry jam into the icing or brushing a light syrup over the warm cake.
