A light and airy strawberry mousse that captures the essence of summer, perfect for special gatherings or a quiet treat.
Ingredients

- 1 pound fresh strawberries, hulled and halved
- 1/2 cup granulated sugar, divided
- 1/4 cup water
- 1 tablespoon lemon juice
- 1 teaspoon vanilla extract
- 1 1/2 cups heavy cream, cold
- 1/4 teaspoon salt
- 2 large egg whites
- Optional: Fresh mint sprigs for garnish
- Optional: Additional sliced strawberries for garnish
Instructions
- In a medium saucepan, combine hulled strawberries and 1/4 cup of sugar. Cook over medium heat for 8 to 10 minutes until softened.
- Puree the softened strawberries using a blender or food processor until smooth, and strain if desired.
- Stir in lemon juice and vanilla extract, then refrigerate until completely cool (about 30-45 minutes).
- Chill your mixing bowl and whisk in the freezer for 15 to 20 minutes.
- Pour cold heavy cream into the chilled bowl, add salt, and whip on medium speed until soft peaks form. Refrigerate.
- In a clean bowl, whip egg whites on medium speed until soft peaks appear. Gradually add remaining sugar, one tablespoon at a time, until stiff peaks form.
- Fold the strawberry puree into the whipped cream until fully combined, then gently fold in the meringue.
- Spoon or pipe the mousse into individual dishes, cover, and refrigerate for at least 4 hours or overnight.
- Garnish with fresh mint and/or sliced strawberries before serving. Enjoy!

For best results, chill all components before whipping. Use the ripest strawberries for maximum flavor.
