Ingredients

- 1 pound strawberries
- 8 oz cream cheese, softened
- 1/4 cup Greek yogurt
- 1/4 cup honey or maple syrup
- 1 tsp vanilla extract
- Mini chocolate chips (for eyes)
Instructions
- Wash and hull the strawberries.
- In a bowl, mix together the cream cheese, Greek yogurt, honey (or maple syrup), and vanilla extract until smooth.
- Cut the tops of the strawberries to create a ‘hat’ look.
- Pipe or spoon the cheesecake filling onto the bottom of each strawberry, then place a ‘hat’ on top.
- Use mini chocolate chips to make eyes on the cheesecake filling.
- Arrange on a platter and serve chilled.
Notes
Best enjoyed chilled and can be served on a festive platter. Store leftovers in an airtight container in the refrigerator for up to 2 days.
