Ingredients

  • 2 cups of strawberries, diced
  • 1/4 cup of sugar
  • 1 tablespoon of lemon juice
  • 1 package of cream cheese, softened
  • 1/2 cup of powdered sugar
  • 1 teaspoon of vanilla extract
  • 1 cup of heavy whipping cream
  • 1 pound of soft sponge cake or store-bought cake rolls
  • 1/4 cup of graham cracker crumbs

Instructions

  1. In a bowl, mix diced strawberries, sugar, and lemon juice. Let sit for 10 minutes.
  2. In another bowl, beat the cream cheese, powdered sugar, and vanilla until smooth.
  3. Whip the heavy cream until soft peaks form, then fold into the cream cheese mixture.
  4. Spread a thin layer of the cheesecake filling on the cake, then add a layer of the macerated strawberries.
  5. Roll the cake tightly and refrigerate for 1 hour.
  6. Slice into sushi rolls and sprinkle with graham cracker crumbs before serving.
