A refreshing and vibrant strawberry sorbet, perfect for summer days. Easy to make with fresh strawberries and just a few ingredients.

- 2 pounds fresh strawberries, hulled and sliced
- 1 cup granulated sugar
- 1 tablespoon lemon juice
- 1/2 cup water
- 1 teaspoon vanilla extract (optional)
Instructions
- Wash the strawberries thoroughly under cold running water.
- Hull the strawberries and slice them in half or quarters.
- In a bowl, combine the strawberries, granulated sugar, and lemon juice; let sit for 30 minutes.
- Blend the strawberry mixture with water and vanilla extract until smooth.
- Optionally strain the mixture for a smoother texture.
- Chill the mixture in the refrigerator for 1-2 hours.
- Churn in an ice cream maker or freeze in a shallow dish, scraping every 30 minutes for 3-4 hours until fluffy.
- Serve immediately or let sit at room temperature for a few minutes before scooping.
Notes
Use ripe strawberries for the best flavor. Different fruits can be blended for a mixed berry sorbet.
