Description

Ingredients

  • 2 cups cooked rice
  • 1 cup fresh or canned corn
  • 1 avocado, diced
  • 2 tablespoons lime juice

Instructions

  1. Heat a skillet on medium heat and cook the chicken for 6-8 minutes on each side, seasoning with salt and pepper.
  2. Prepare the corn by grilling or sautéing fresh corn or draining canned corn.
  3. In a mixing bowl, combine the cooked rice, corn, avocado, and lime juice.
  4. Slice the rested chicken and layer it on top of the rice mixture.
  5. Add optional toppings as desired.
