- 1 lb lean chicken breast
- 2 cups cooked rice
- 1 cup fresh or canned corn
- 1 avocado, diced
- 2 tablespoons lime juice
- Salt and pepper to taste
- Optional toppings: chopped cilantro, red onion, jalapeños
Instructions
- Heat a skillet on medium heat and cook the chicken for 6-8 minutes on each side, seasoning with salt and pepper.
- Prepare the corn by grilling or sautéing fresh corn or draining canned corn.
- In a mixing bowl, combine the cooked rice, corn, avocado, and lime juice.
- Slice the rested chicken and layer it on top of the rice mixture.
- Add optional toppings as desired.
- Serve and enjoy!
Notes
For enhanced flavor, marinate the chicken with lime juice and garlic beforehand. Store leftovers separately for best freshness.
