Ingredients

  • 1 1/2 lb beef tenderloin, trimmed
  • 2 Tbsp olive oil, divided
  • 1 Tbsp salt for tenderloin exterior
  • 1 tsp black pepper for tenderloin exterior
  • Kitchen twine
  • 2 slices bacon, diced
  • 2 small to medium gala apples, peeled, cored, and diced
  • 1 small yellow onion, diced
  • 2 cloves garlic, minced
  • 1/2 tsp kosher salt for stuffing
  • 1/4 tsp black pepper for stuffing
  • 1 Tbsp chopped fresh sage
  • 1 1/2 tsp chopped fresh rosemary
  • 1 tsp chopped fresh thyme
  • 1 1/2 Tbsp packed light brown sugar
  • 1 1/2 tsp smoked paprika
  • 3/4 tsp garlic powder
  • 1/2 tsp black pepper additional for stuffing
  • 3 cups high-quality, low-sodium beef broth
  • 1 tsp apple bourbon extract
  • 1 Tbsp Worcestershire sauce
  • 1 tsp Dijon mustard
  • 1 Tbsp cornstarch mixed with 2 Tbsp cold water
  • 1 Tbsp unsalted butter, cold
  • Salt and pepper to taste for gravy

Instructions

  1. Cook diced bacon in a skillet until crispy. Remove bacon and leave fat in the pan.
  2. Sauté onion in bacon fat until translucent, then add apples and garlic, cooking until apples soften.
  3. Add herbs, brown sugar, smoked paprika, garlic powder, kosher salt, and black pepper. Stir in reserved bacon and let cool.
  4. Butterfly the tenderloin open and pound to an even thickness, seasoning inside with salt and pepper.
  5. Spread stuffing over tenderloin, roll tightly, and secure with kitchen twine.
  6. Heat a skillet with 1 Tbsp olive oil and sear rolled tenderloin on all sides until browned.
  7. Transfer to a preheated oven at 400°F (200°C) and roast for 25-40 minutes, monitoring with a meat thermometer.
  8. Let tenderloin rest for 10-15 minutes.
  9. Deglaze skillet with some beef broth, then add remaining broth, Worcestershire, Dijon mustard, and apple bourbon extract, simmering.
  10. Thicken gravy with cornstarch slurry, finish with cold butter, and taste for seasoning.
  11. Slice tenderloin into medallions and serve with gravy and garnishes.
