- 1 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1 cup unsalted butter, softened
- 1 1/2 cups white sugar
- 1 egg
- 1 teaspoon vanilla extract
- 1/2 cup unsalted butter (for frosting)
- 3 cups powdered sugar
- 1 teaspoon vanilla extract (for frosting)
- 2 tablespoons milk
Instructions
- Preheat your oven to 375°F (190°C) and grease a 9×13 inch baking dish.
- Sift together flour, baking soda, and baking powder in a mixing bowl.
- Cream together softened butter and sugar in a separate large bowl until smooth and creamy.
- Add in the egg and vanilla extract, mixing until fully combined.
- Gradually incorporate the dry ingredients into the wet mixture, being careful not to overmix.
- Pour the batter into the prepared baking dish and spread evenly.
- Bake for 8 to 10 minutes until edges are lightly golden.
- Allow to cool in the pan for 10 to 15 minutes.
- For the frosting, beat together the butter, powdered sugar, vanilla extract, and milk until smooth and creamy.
- Spread frosting over cooled cookie bars, cut into squares, and serve.
Notes
Store cookie bars in an airtight container at room temperature for up to 3–4 days; refrigerate for up to a week or freeze for up to 2 months.
