Description
This easy slow cooker peach butter is naturally sweetened and bursting with summer flavor. A healthy and hands-off way to preserve fresh peaches using monk fruit, stevia, or erythritol.
Ingredients
Scale
- 8–10 ripe freestone peaches, peeled, pitted, and sliced
- 2 tablespoons lemon juice
- 1 teaspoon ground cinnamon (optional)
- ¼ teaspoon ground ginger or nutmeg (optional)
- 1 teaspoon vanilla extract
- Sweetener to taste (monk fruit, stevia, or erythritol)
Instructions
- Prep the Peaches: Wash, peel, pit, and slice the peaches. If using frozen peaches, thaw and drain first.
- Load the Slow Cooker: Add peaches, lemon juice, cinnamon, ginger (if using), and vanilla to the slow cooker. Stir to combine.
- Cook: Set to LOW for 8–10 hours or HIGH for 4–6 hours. Keep the lid slightly ajar to allow steam to escape.
- Blend: Use an immersion blender directly in the slow cooker or transfer contents to a food processor. Blend until smooth.
- Reduce (Optional): If the mixture is too runny, continue cooking uncovered on LOW for 1–2 more hours, stirring occasionally.
- Sweeten: Taste and add natural sweetener if desired. Stir well.
- Cool & Store: Let the peach butter cool slightly, then transfer to clean jars or containers. Refrigerate up to 3 weeks or freeze for up to 6 months.
Notes
Use very ripe peaches for the best natural sweetness. You can skip sweeteners altogether if your fruit is sweet enough.
