Ingredients

  • 1 avocado, cubed

  • Optional: Thinly sliced jalapeño or serrano pepper
  • For the dressing:
  • 2 tbsp extra-virgin olive oil
  • 3 tbsp fresh lime juice
  • 1/2 garlic clove, minced
  • 1/4 tsp sea salt

Instructions

  1. Make the dressing: In a small bowl, whisk together the olive oil, fresh lime juice, minced garlic, and sea salt until well combined.
  2. Arrange the base: On a large platter or in a salad bowl, spread out the cubed watermelon, diced cucumber, and sliced red onion.
  3. Add toppings: Drizzle half of the dressing over the base. Then add the cubed avocado, crumbled feta cheese, chopped herbs, and optional sliced pepper.
  4. Final touch: Drizzle the remaining dressing over the top. Season with additional salt to taste.
