- 5 cups cubed watermelon
- 1 cup diced English cucumber
- 1/4 cup thinly sliced red onion
- 1/3 cup crumbled feta cheese
- 1 avocado, cubed
- 1/3 cup chopped fresh mint or basil
- Optional: Thinly sliced jalapeño or serrano pepper
- For the dressing:
- 2 tbsp extra-virgin olive oil
- 3 tbsp fresh lime juice
- 1/2 garlic clove, minced
- 1/4 tsp sea salt
Instructions
- Make the dressing: In a small bowl, whisk together the olive oil, fresh lime juice, minced garlic, and sea salt until well combined.
- Arrange the base: On a large platter or in a salad bowl, spread out the cubed watermelon, diced cucumber, and sliced red onion.
- Add toppings: Drizzle half of the dressing over the base. Then add the cubed avocado, crumbled feta cheese, chopped herbs, and optional sliced pepper.
- Final touch: Drizzle the remaining dressing over the top. Season with additional salt to taste.
- Serve: Serve immediately or chill briefly before serving for best flavor.
