For the Chicken:

  • ¾1 lb chicken breast, cubed into 1-inch pieces
  • 1 tbsp cornstarch
  • ¼ tsp black pepper
  • ¼ tsp salt
  • ½ tsp red pepper flakes (optional)
  • 1 small red bell pepper, sliced
  • 1 small orange bell pepper, sliced
  • 1 jalapeño, sliced (optional)
  • 1 tbsp olive oil

Sweet Chili Sauce:

  • 1 tbsp butter
  • 3 cloves garlic, minced
  • 1 inch ginger, minced
  • ¾ cup sweet chili sauce
  • 12 tbsp honey

Garnish:

  • 1 lime, sliced
  • 3 tbsp green onions, chopped

Instructions

  1. Preheat oven: to 375°F (190°C).
  2. Prepare the chicken: Cube into even pieces. Toss in a bowl with cornstarch, salt, pepper, and red pepper flakes until coated.
  3. Arrange on a sheet pan: Spread chicken evenly on a greased sheet pan. Add bell peppers and jalapeño slices around the chicken.
  4. Bake: for 20 minutes, flipping the chicken halfway through.
  5. Make the sauce: In a small saucepan, melt butter. Add garlic and ginger, sauté 1 minute. Stir in sweet chili sauce and honey. Simmer for 1–2 minutes, then remove from heat.
  6. Coat the chicken: Pour the sauce over the baked chicken and veggies. Toss until well coated.
  7. Optional: Return to the oven for 2–3 minutes to let the sauce caramelize slightly.
  8. Garnish: with chopped green onions and a squeeze of fresh lime juice. Serve hot over jasmine rice, cauliflower rice, or noodles.

Notes

Adjust the spice level by omitting jalapeño or red pepper flakes. Add broccoli or snap peas for extra vegetables.
