Ingredients

  • 1.5 to 2 pounds boneless, skinless chicken breasts
  • 1 cup sweet chili sauce
  • 2 tablespoons soy sauce
  • 4 cloves garlic, minced
  • 1 tablespoon ginger, minced
  • 2 tablespoons vegetable oil
  • 1/4 cup cornstarch
  • Salt and pepper to taste
  • 2 green onions, sliced
  • 1 tablespoon sesame seeds
  • Rice or noodles for serving

Instructions

  1. In a bowl, mix together the sweet chili sauce, soy sauce, minced garlic, and minced ginger. Add the chicken pieces to the bowl and marinate in the refrigerator for at least 30 minutes, or up to 2 hours.
  2. In a shallow dish, place cornstarch and season with salt and pepper. Dredge the marinated chicken in the cornstarch until evenly coated.
  3. Heat vegetable oil in a large skillet over medium-high heat. Fry the chicken in batches for about 4-5 minutes on each side until golden brown and fully cooked. Transfer to a paper towel-lined plate.
  4. In the same pan, pour in the remaining marinade and simmer until it thickens. Add the fried chicken back to the pan and toss to coat with the glaze. Cook for an additional 2-3 minutes.
  5. Garnish with sliced green onions and sesame seeds. Serve hot with rice or noodles.

Notes

For extra crunch, add vegetables like bell peppers or broccoli. Adjust the sweet chili sauce according to your taste preference.
