This Sweet Hawaiian Crockpot Chicken is a savory and sweet slow cooker meal made with tender chicken, pineapple, soy sauce, and brown sugar. It’s easy, flavorful, and perfect for a family dinner served over rice or quinoa.

- 2 lbs boneless, skinless chicken breasts or thighs
- 1 can (20 oz) pineapple chunks (including juice)
- ½ cup soy sauce (light or low sodium)
- ½ cup brown sugar
- Optional:
- 2 garlic cloves, minced
- 1 tsp grated fresh ginger
- ½ tsp red pepper flakes
- 1 sliced bell pepper
- 1 small chopped onion
Instructions
- Prepare Chicken: Cut chicken into chunks or leave whole as preferred.
- Mix Sauce: In a bowl, combine soy sauce, pineapple juice (from the can), brown sugar, and optional ingredients like garlic and ginger.
- Assemble in Crockpot: Place chicken in the crockpot. Pour sauce mixture over the top. Add pineapple chunks and any optional vegetables (pepper, onion).
- Cook: Cover and cook on Low for 6–7 hours or on High for 3–4 hours until chicken is tender and flavorful.
- Thicken Sauce (Optional): Remove 1 cup of cooking liquid. Heat in a small saucepan and whisk in 1 tbsp cornstarch until thickened. Return to the crockpot and stir well.
- Serve: Garnish with chopped green onions and sesame seeds if desired. Serve warm over white rice, brown rice, quinoa, or sandwich rolls.
Notes
- You can substitute fresh pineapple for canned if preferred, but make sure to add some juice to the sauce.
- Try adding chopped bell peppers or broccoli in the last hour for a veggie boost.
- Leftovers can be stored in an airtight container in the fridge for up to 3 days.
