  • 1 can (20 oz) pineapple chunks (including juice)
  • ½ cup soy sauce (light or low sodium)
  • ½ cup brown sugar
  • Optional:
  • 2 garlic cloves, minced
  • 1 tsp grated fresh ginger
  • ½ tsp red pepper flakes
  • 1 sliced bell pepper
  • 1 small chopped onion

Instructions

  1. Prepare Chicken: Cut chicken into chunks or leave whole as preferred.
  2. Mix Sauce: In a bowl, combine soy sauce, pineapple juice (from the can), brown sugar, and optional ingredients like garlic and ginger.
  3. Assemble in Crockpot: Place chicken in the crockpot. Pour sauce mixture over the top. Add pineapple chunks and any optional vegetables (pepper, onion).
  4. Cook: Cover and cook on Low for 6–7 hours or on High for 3–4 hours until chicken is tender and flavorful.
  5. Thicken Sauce (Optional): Remove 1 cup of cooking liquid. Heat in a small saucepan and whisk in 1 tbsp cornstarch until thickened. Return to the crockpot and stir well.
  6. Serve: Garnish with chopped green onions and sesame seeds if desired. Serve warm over white rice, brown rice, quinoa, or sandwich rolls.

Notes

  • You can substitute fresh pineapple for canned if preferred, but make sure to add some juice to the sauce.
  • Try adding chopped bell peppers or broccoli in the last hour for a veggie boost.
