A comforting casserole made with ground turkey, sweet potatoes, veggies, rice, and cheese baked in a tomato sauce. A wholesome and hearty dinner.

- 1 lb ground turkey
- 1 large sweet potato, peeled and cubed
- 1 onion, chopped
- 1 green bell pepper, chopped
- 1 (14.5 oz) can diced tomatoes, undrained
- 1 (15 oz) can tomato sauce
- 1/2 cup cooked rice
- 1/4 cup fresh parsley, chopped
- 1 tsp chili powder
- 1/2 tsp cumin
- 1/4 tsp salt
- 1/4 tsp black pepper
- 1/2 cup shredded cheddar cheese
Optional Add-ins:
- Black beans or kidney beans
- Red pepper flakes for spice
- Sour cream for topping
Instructions
- Cook the Turkey and Veggies: In a large skillet over medium heat, brown the ground turkey, breaking it apart as it cooks. Drain any grease. Add chopped onion and bell pepper, cook for 5 minutes until softened.
- Mix in Sauces and Spices: Stir in diced tomatoes (with juice), tomato sauce, cooked rice, parsley, chili powder, cumin, salt, and pepper. Simmer for 5 minutes, stirring occasionally.
- Add Sweet Potatoes: Stir in cubed sweet potatoes. Mix to combine evenly.
- Assemble and Bake: Transfer to a 9×13-inch baking dish. Top with shredded cheddar cheese. Bake at 375°F (190°C) for 30–35 minutes, until bubbly and golden on top.
- Serve: Let it cool for a few minutes before serving. Top with sour cream, fresh herbs, or hot sauce if desired.
Notes
Swap rice for quinoa for extra protein. Great as a meal prep dish — reheats well for lunches.
