Ingredients

  • 3 cups mashed sweet potatoes
  • 1/2 cup brown sugar
  • 1/4 cup milk
  • 1/4 cup butter, melted
  • 1/2 teaspoon vanilla extract
  • 1/2 teaspoon cinnamon
  • 1 cup mini marshmallows
  • 1/2 cup pecans, chopped
  • 1/4 cup brown sugar (for streusel)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, mix mashed sweet potatoes with brown sugar, milk, melted butter, vanilla extract, and cinnamon until smooth.
  3. Pour the sweet potato mixture into a greased baking dish.
  4. In a separate bowl, combine chopped pecans and brown sugar to make the streusel. Sprinkle the pecan mixture evenly over the sweet potato layer.
  5. Bake in the preheated oven for 20 minutes.
  6. Remove from the oven and top with mini marshmallows.
  7. Return to the oven and bake for an additional 10-15 minutes, or until the marshmallows are golden and gooey.
  8. Serve warm as a side dish for Thanksgiving.

Notes

Store leftovers in the refrigerator for 3-4 days or freeze for up to 2 months. Reheat in the oven before serving.
