- 3 cups mashed sweet potatoes
- 1/2 cup brown sugar
- 1/4 cup milk
- 1/4 cup butter, melted
- 1/2 teaspoon vanilla extract
- 1/2 teaspoon cinnamon
- 1 cup mini marshmallows
- 1/2 cup pecans, chopped
- 1/4 cup brown sugar (for streusel)
Instructions
- Preheat the oven to 350°F (175°C).
- In a large bowl, mix mashed sweet potatoes with brown sugar, milk, melted butter, vanilla extract, and cinnamon until smooth.
- Pour the sweet potato mixture into a greased baking dish.
- In a separate bowl, combine chopped pecans and brown sugar to make the streusel. Sprinkle the pecan mixture evenly over the sweet potato layer.
- Bake in the preheated oven for 20 minutes.
- Remove from the oven and top with mini marshmallows.
- Return to the oven and bake for an additional 10-15 minutes, or until the marshmallows are golden and gooey.
- Serve warm as a side dish for Thanksgiving.
Notes
Store leftovers in the refrigerator for 3-4 days or freeze for up to 2 months. Reheat in the oven before serving.
