Description

Ingredients

  • 2 large sweet potatoes, thinly sliced
  • 1 cup heavy cream
  • 1 cup fresh cranberries
  • 1/2 cup grated cheese (such as Gruyère or Parmesan)
  • 2 tablespoons butter
  • Salt and pepper to taste
  • 1 teaspoon thyme (optional)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Grease a baking dish generously with butter.
  3. Arrange half of the sliced sweet potatoes in the bottom of the baking dish, seasoning with salt and pepper.
  4. Sprinkle half of the cranberries over the sweet potatoes.
  5. Drizzle half of the heavy cream over this layer.
  6. Repeat the layers with the remaining ingredients.
  7. Sprinkle grated cheese and thyme over the top.
  8. Cover with foil and bake for 30 minutes.
  9. Remove the foil and bake for an additional 20-25 minutes until golden brown.
  10. Let cool for a few minutes before serving.

Notes

For best results, use firm sweet potatoes and fresh cranberries. Leftovers can be refrigerated for 3-4 days or frozen for up to 2 months.
