Ingredients

- 2 large sweet potatoes, thinly sliced
- 1 cup heavy cream
- 1 cup fresh cranberries
- 1/2 cup grated cheese (such as Gruyère or Parmesan)
- 2 tablespoons butter
- Salt and pepper to taste
- 1 teaspoon thyme (optional)
Instructions
- Preheat your oven to 375°F (190°C).
- Grease a baking dish generously with butter.
- Arrange half of the sliced sweet potatoes in the bottom of the baking dish, seasoning with salt and pepper.
- Sprinkle half of the cranberries over the sweet potatoes.
- Drizzle half of the heavy cream over this layer.
- Repeat the layers with the remaining ingredients.
- Sprinkle grated cheese and thyme over the top.
- Cover with foil and bake for 30 minutes.
- Remove the foil and bake for an additional 20-25 minutes until golden brown.
- Let cool for a few minutes before serving.
Notes
For best results, use firm sweet potatoes and fresh cranberries. Leftovers can be refrigerated for 3-4 days or frozen for up to 2 months.
