Ingredients

  • 3 medium sweet potatoes, peeled and diced into 1 -inch pieces
  • 1 pound green beans, ends trimmed
  • 3 tablespoons extra virgin olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • Salt and freshly ground pepper to taste
  • 1 tablespoon freshly squeezed lemon juice
  • 1/4 cup grated Parmesan cheese (optional)

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Place the diced sweet potatoes and trimmed green beans into a large mixing bowl. Toss gently to combine.
  3. Drizzle the olive oil over the vegetables. Sprinkle in the garlic powder, onion powder, smoked paprika, salt, and pepper. Add the lemon juice and toss thoroughly.
  4. Spread the seasoned vegetables in a single layer on a baking tray.
  5. Roast in the preheated oven for 25–30 minutes, stirring halfway through.
  6. If using Parmesan, sprinkle it over the vegetables in the last 5 minutes of roasting.
  7. Remove from the oven, toss gently, and serve warm.
