  • 1 pound green beans, ends trimmed
  • 3 tablespoons extra virgin olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • Salt and freshly ground pepper to taste
  • 1 tablespoon freshly squeezed lemon juice
  • 1/4 cup grated Parmesan cheese (optional)

Instructions

  1. Preheat oven to 425°F (220°C).
  2. In a large bowl, combine sweet potatoes and green beans.
  3. Drizzle with olive oil, then add garlic powder, onion powder, smoked paprika, salt, pepper, and lemon juice. Toss to coat.
  4. Spread mixture on a baking tray in a single layer.
  5. Roast for 25–30 minutes, stirring halfway, until sweet potatoes are golden and tender.
  6. If using Parmesan, sprinkle it over the vegetables in the last 5 minutes of roasting.
