Crispy, flavor-packed sweet potato skins topped with savory fillings, perfect as an appetizer or snack.
Ingredients

- 3–4 large sweet potatoes
- pinch of salt
- ¾ cup ketchup
- 2 tablespoons brown sugar
- 1 tablespoon white vinegar
- 1 tablespoon Worcestershire sauce
- 2 teaspoons paprika
- ¼ teaspoon cayenne pepper
- 3–4 teaspoons maple syrup
- ¼ lb. smoked turkey or chicken, shredded or chopped
- 3 tablespoons barbecue sauce, plus extra for drizzling
- 3 ounces white cheddar cheese, shredded
- 3–4 slices beef bacon, fried crisp and crumbled
- Sour cream for serving (optional)
Instructions
- Preheat your oven to 400°F (200°C). Poke holes in the sweet potatoes and sprinkle with salt.
- Bake sweet potatoes for 45 to 60 minutes until tender.
- Let them cool for 10-15 minutes, then slice in half lengthwise.
- Scoop out the flesh, leaving a sturdy border, and set the skins aside.
- In a skillet, cook beef bacon until crispy, then crumble. Prepare the BBQ glaze by simmering ketchup, brown sugar, vinegar, Worcestershire sauce, paprika, and cayenne.
- Mix shredded turkey with barbecue sauce and some of the BBQ glaze.
- In a bowl, mash the sweet potato flesh with maple syrup and salt.
- Fill the skins with the sweet potato base, top with the turkey mixture, then sprinkle cheese and bacon on top.
- Return to the oven and bake for an additional 15-20 minutes until cheese is melted and golden.
- Cool slightly and serve with sour cream and extra barbecue sauce.
Notes
For variations, consider adding jalapeños for spice or substituting the meat for black beans for a vegetarian option.
