Description

Crispy, flavor-packed sweet potato skins topped with savory fillings, perfect as an appetizer or snack.

Ingredients

Scale
  • 34 large sweet potatoes
  • pinch of salt
  • ¾ cup ketchup
  • 2 tablespoons brown sugar
  • 1 tablespoon white vinegar
  • 1 tablespoon Worcestershire sauce
  • 2 teaspoons paprika
  • ¼ teaspoon cayenne pepper
  • 34 teaspoons maple syrup
  • ¼ lb. smoked turkey or chicken, shredded or chopped
  • 3 tablespoons barbecue sauce, plus extra for drizzling
  • 3 ounces white cheddar cheese, shredded
  • 34 slices beef bacon, fried crisp and crumbled
  • Sour cream for serving (optional)

Instructions

  1. Preheat your oven to 400°F (200°C). Poke holes in the sweet potatoes and sprinkle with salt.
  2. Bake sweet potatoes for 45 to 60 minutes until tender.
  3. Let them cool for 10-15 minutes, then slice in half lengthwise.
  4. Scoop out the flesh, leaving a sturdy border, and set the skins aside.
  5. In a skillet, cook beef bacon until crispy, then crumble. Prepare the BBQ glaze by simmering ketchup, brown sugar, vinegar, Worcestershire sauce, paprika, and cayenne.
  6. Mix shredded turkey with barbecue sauce and some of the BBQ glaze.
  7. In a bowl, mash the sweet potato flesh with maple syrup and salt.
  8. Fill the skins with the sweet potato base, top with the turkey mixture, then sprinkle cheese and bacon on top.
  9. Return to the oven and bake for an additional 15-20 minutes until cheese is melted and golden.
  10. Cool slightly and serve with sour cream and extra barbecue sauce.

Notes

For variations, consider adding jalapeños for spice or substituting the meat for black beans for a vegetarian option.
