Ingredients

  • 2 cups sliced cucumber (English or Persian preferred)
  • 2 tablespoons fresh lime juice
  • 1/2 teaspoon Tajín or chili powder (adjust to taste)
  • 1/4 cup chopped fresh cilantro
  • 1/4 cup thinly sliced red onion (optional)
  • 1/3 cup crumbled feta or queso fresco (optional)
  • Salt to taste
  • Optional add-ins: Jicama strips, diced mango, avocado chunks, mint leaves

Instructions

  1. Cube the watermelon and slice the cucumber.
  2. If using, prepare red onion, feta, avocado, or other optional add-ins.
  3. In a large bowl, gently mix watermelon, cucumber, and red onion.
  4. Drizzle with lime juice and sprinkle Tajín and salt to taste.
  5. Top with crumbled cheese and chopped cilantro.
  6. Chill for 15–30 minutes before serving for best flavor.

Notes

For a spicier version, increase the amount of Tajín or add sliced jalapeños. Use vegan cheese to make it fully plant-based.
