Description
A refreshing and flavorful Mexican-inspired summer salad made with watermelon, cucumber, lime, and a touch of chili. Optionally topped with feta or queso fresco, it’s perfect for warm days.
Ingredients

- 4 cups diced seedless watermelon
- 2 cups sliced cucumber (English or Persian preferred)
- 2 tablespoons fresh lime juice
- 1/2 teaspoon Tajín or chili powder (adjust to taste)
- 1/4 cup chopped fresh cilantro
- 1/4 cup thinly sliced red onion (optional)
- 1/3 cup crumbled feta or queso fresco (optional)
- Salt to taste
- Optional add-ins: Jicama strips, diced mango, avocado chunks, mint leaves
Instructions
- Cube the watermelon and slice the cucumber.
- If using, prepare red onion, feta, avocado, or other optional add-ins.
- In a large bowl, gently mix watermelon, cucumber, and red onion.
- Drizzle with lime juice and sprinkle Tajín and salt to taste.
- Top with crumbled cheese and chopped cilantro.
- Chill for 15–30 minutes before serving for best flavor.
Notes
For a spicier version, increase the amount of Tajín or add sliced jalapeños. Use vegan cheese to make it fully plant-based.
