Description

Delicious Cranberry Bliss Bars with a soft blondie base, white chocolate, and tangy orange cream cheese frosting.


Ingredients

  • 1 1/2 cups all-purpose flour (7.5 oz)
  • 1 tsp baking powder
  • 1/2 tsp table salt
  • 12 tbsp unsalted butter (6 oz), softened
  • 1 1/2 cups packed light brown sugar (10.5 oz)
  • 2 large eggs, lightly beaten
  • 2 tsp vanilla extract
  • 1 tsp grated orange zest
  • 3/4 cup dried cranberries (3.5 oz, finely chopped)
  • 1 1/3 cups white chocolate, chopped or chips (8 oz)
  • 8 oz full-fat cream cheese, softened
  • 1 1/2 cups confectioners’ sugar, sifted
  • 1 tsp vanilla extract
  • 1 tbsp orange juice
  • 1 tsp orange zest, finely grated
  • 1/2 cup white chocolate chips or melting wafers, for drizzling
  • 1/4 cup dried cranberries, finely chopped, for sprinkling

Instructions

  1. Preheat oven to 350°F (175°C). Line a 9×13 inch baking pan with parchment paper and lightly grease.
  2. Cream together butter and brown sugar on medium-high speed for about 3 to 5 minutes until fluffy.
  3. Add eggs one at a time, beating well after each addition and stir in vanilla extract.
  4. In a separate bowl, mix flour, baking powder, and salt.
  5. Gradually add dry ingredients to the wet mixture and mix until just combined.
  6. Fold in white chocolate chips, chopped cranberries, and grated orange zest.
  7. Spread batter evenly in the prepared pan and bake for 25 to 30 minutes until lightly golden.
  8. Let cool completely in the pan on a wire rack.
  9. In a clean bowl, beat together cream cheese and butter until smooth.
  10. Gradually add sifted confectioners’ sugar until thick and creamy.
  11. Beat in vanilla extract, orange juice, and orange zest, until fluffy.
  12. Spread cream cheese frosting over cooled bars.
  13. Melt white chocolate chips in 20-second intervals until smooth and drizzle over frosting.
  14. Sprinkle with chopped dried cranberries and chill for 1 to 2 hours before cutting.

Notes

These bars make a perfect treat for gatherings and can be stored in the fridge for up to 5 to 7 days.
