  • 1 lb boneless and skinless chicken breasts, cut into 1-inch pieces
  • 2 large zucchini, diced
  • 2 medium bell peppers, chopped
  • 1 medium onion, finely chopped
  • 3 large garlic cloves, minced
  • 1 cup corn, frozen or fresh
  • 1 tbsp oil for frying
  • 14 oz can low sodium black beans, drained and rinsed
  • 14 oz can low sodium diced tomatoes, not drained
  • 1 tsp store bought or homemade taco seasoning
  • 1 tbsp cumin, divided
  • 1 tsp salt
  • Ground black pepper to taste
  • 1 cup Tex Mex or Colby Jack cheese, shredded
  • 1/2 cup green onions, chopped
  • 1/2 cup cilantro, chopped

Instructions

  1. Heat oil in a large skillet over medium heat. Add chicken and cook for 5–7 minutes until golden brown and cooked through. Remove and set aside.
  2. In the same skillet, add onion, bell peppers, and garlic. Sauté until onion is translucent.
  3. Add diced zucchini and corn, cook until zucchini is tender.
  4. Return chicken to the skillet. Add black beans, diced tomatoes, taco seasoning, and half of the cumin. Season with salt and pepper, simmer for 10 minutes.
  5. Preheat oven to 375°F. Transfer skillet contents to a baking dish. Sprinkle shredded cheese on top.
  6. Bake for 10 minutes or until cheese is melted and bubbly.
  7. Garnish with green onions and cilantro. Serve hot.
