  • 2 chicken breasts, cooked and chopped
  • 3 cups coleslaw mix
  • 1/2 cup grated carrot (optional)
  • 1/4 cup chopped cilantro
  • 1/4 cup roasted, salted peanuts
  • 46 tortillas

Instructions

  1. Whisk together the peanut butter, soy sauce, brown sugar (or honey), rice wine vinegar, minced garlic, minced ginger, and sriracha sauce in a small saucepan over medium heat. Stir until the mixture is smooth, adding water if needed to achieve desired consistency.
  2. Chop cooked chicken breasts into bite-sized pieces and mix into the sauce.
  3. Lay out tortillas on a flat surface. On each tortilla, layer coleslaw mix, grated carrot, and cilantro, then add the peanut chicken mixture. Sprinkle with roasted, salted peanuts.
  4. Roll each tortilla tightly and slice in half for serving.
