- 1/4 cup roasted, salted peanuts
- 4–6 tortillas
Instructions
- Whisk together the peanut butter, soy sauce, brown sugar (or honey), rice wine vinegar, minced garlic, minced ginger, and sriracha sauce in a small saucepan over medium heat. Stir until the mixture is smooth, adding water if needed to achieve desired consistency.
- Chop cooked chicken breasts into bite-sized pieces and mix into the sauce.
- Lay out tortillas on a flat surface. On each tortilla, layer coleslaw mix, grated carrot, and cilantro, then add the peanut chicken mixture. Sprinkle with roasted, salted peanuts.
- Roll each tortilla tightly and slice in half for serving.
