Description

Ingredients

  • 4 boneless, skinless chicken breasts (approx. 1.5 lbs)
  • Salt and pepper, to taste
  • 1 tablespoon vegetable oil
  • 2 cloves garlic, minced
  • 1/4 cup low-sodium soy sauce
  • 1/3 cup creamy natural peanut butter
  • 1/2 cup full-fat coconut milk
  • Chopped peanuts, for garnish
  • Fresh cilantro, for garnish

Instructions

  1. Cut chicken into bite-sized pieces and season with salt and pepper.
  2. Heat vegetable oil in a skillet over medium-high heat, add chicken, and cook until golden brown (5-7 minutes).
  3. Remove chicken from skillet and set aside.
  4. Add minced garlic to the skillet and sauté for about 1 minute until fragrant.
  5. Stir in soy sauce, peanut butter, and coconut milk; mix until combined.
  6. Return chicken to the skillet and stir to coat with the sauce; simmer for a few minutes.
  7. Serve hot, garnished with chopped peanuts and cilantro.

Notes

For an extra kick, add sriracha or red pepper flakes to the sauce.
