- Salt and pepper, to taste
- 1 tablespoon vegetable oil
- 2 cloves garlic, minced
- 1/4 cup low-sodium soy sauce
- 1/3 cup creamy natural peanut butter
- 1/2 cup full-fat coconut milk
- Chopped peanuts, for garnish
- Fresh cilantro, for garnish
Instructions
- Cut chicken into bite-sized pieces and season with salt and pepper.
- Heat vegetable oil in a skillet over medium-high heat, add chicken, and cook until golden brown (5-7 minutes).
- Remove chicken from skillet and set aside.
- Add minced garlic to the skillet and sauté for about 1 minute until fragrant.
- Stir in soy sauce, peanut butter, and coconut milk; mix until combined.
- Return chicken to the skillet and stir to coat with the sauce; simmer for a few minutes.
- Serve hot, garnished with chopped peanuts and cilantro.
Notes
For an extra kick, add sriracha or red pepper flakes to the sauce.
