  • ⅔ cup softened butter
  • 1 tablespoon + 1 teaspoon ground cinnamon
  • 2 to cups powdered sugar
  • ½ cup light brown sugar
  • 1 teaspoon vanilla extract
  • 12 tablespoons milk (dairy or plant-based)
  • ¼ teaspoon salt

Instructions

  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Cream together the softened butter, brown sugar, and granulated sugar until light and fluffy.
  3. Add the egg and vanilla extract. Beat until fully combined.
  4. Stir in the flour, baking soda, salt, and cinnamon until just mixed. Do not overmix.
  5. Roll dough into 1½ tablespoon-sized balls.
  6. Mix the cinnamon sugar coating in a shallow bowl.
  7. Roll each dough ball in the cinnamon sugar mixture until fully coated.
  8. Place on the baking sheet and bake for 8–10 minutes, or until the edges are just set.
  9. Let cookies cool completely before frosting if using buttercream.
  10. Optional buttercream: Beat softened butter with cinnamon, brown sugar, powdered sugar, vanilla, and salt. Add milk gradually to reach desired consistency. Pipe or spread onto cooled cookies.

Notes

For best results, do not overbake—cookies will continue to set as they cool. You can freeze the dough balls or finished cookies. Vegan versions can be made with plant-based butter and egg substitute.
