Instructions
- Dice the bell pepper and red onion into small, uniform pieces.
- Grate the cheddar cheese (use a coarse grater for better texture).
- Mix together the corn, peppers, onions, and cheese in a large bowl.
- Chill the mixture until ready to serve.
- Right before serving, stir in the mayonnaise and Fritos.
- Serve immediately to preserve the crunch of the chips.
Notes
For best results, mix in the Fritos just before serving. You can use canned, fresh, or thawed frozen corn. Optional: Add diced jalapeños or a dash of hot sauce for extra kick.
