- 1½ lbs sirloin steak, cut into 1-inch cubes (or NY strip, tenderloin, etc.)
- 1 lb Yukon Gold potatoes, diced into ½-inch cubes (or red/fingerling)
- 4 tbsp unsalted butter, divided
- 1 tbsp olive oil
- 4 garlic cloves, minced
- 1 tsp dried rosemary
- 1 tsp dried oregano
- ½ tsp kosher salt
- ½ tsp ground black pepper
- Fresh parsley for garnish (optional)
Instructions
- Prep the Pan: Heat a cast iron skillet over medium-high heat. Add 1 tbsp olive oil and 2 tbsp butter, and let it melt completely.
- Cook the Potatoes: Add diced potatoes, garlic, rosemary, oregano, salt, and pepper. Cook undisturbed for 4 minutes to create a golden crust. Stir and cook another 3–4 minutes until fork tender. Remove and set aside.
- Sear the Steak: Increase heat to high. Add remaining 2 tbsp butter and let melt. Add steak bites in a single layer and cook for 1 minute without stirring. Flip or stir and cook another 1–2 minutes to desired doneness.
- Combine and Serve: Return potatoes to the skillet and toss with steak. Adjust seasoning if needed. Garnish with chopped parsley and serve hot.
Notes
For extra richness, finish with a splash of lemon juice or drizzle of garlic butter. Can be served over rice, salad, or roasted vegetables.
