- 1 cup Coconut oil, melted
- 3 Eggs
- 1 ¼ cups granulated white Sugar
- 1 teaspoon vanilla extract
- 3 cups all-purpose flour
- 2 teaspoons cinnamon

- 1/2 tsp cream of tartar
- 1 teaspoon salt
- 2 cups grated zucchini (wet)
- If you do not have cream of tartar you can substitute 1/2 tsp of baking powder

- ½ cup granulated white sugar
- 1 teaspoon cinnamon
- 1/4 tsp cream of tartar
- If you do not have cream of tartar you can omit it from the topping, no replacement is necessary
Instructions
- Preheat your oven to 350 degrees Fahrenheit. Coat two 4 ½ x 8 ½ inch loaf pans with cooking spray.
- In a large mixing bowl, whisk the melted coconut oil and eggs until well combined. Gradually add the sugar and vanilla extract, whisking continuously.
- In another bowl, combine the flour, cinnamon, baking soda, cream of tartar, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
- Fold in the grated zucchini until evenly distributed throughout the batter.
- Divide the batter between the prepared loaf pans. Mix the topping ingredients in a small bowl and sprinkle evenly over the batter.
- Bake for 45-55 minutes, or until a toothpick inserted into the center comes out clean.
- Let cool in the pans for 10 minutes before transferring to a wire rack to cool completely. Serve warm or at room temperature.
