These churros cookies are soft, chewy, and coated in cinnamon sugar—just like the classic treat! Optionally topped with a spiced buttercream frosting for the ultimate dessert. Easily adaptable for vegan diets too.

Ingredients

Scale

For the Dough:

  • ¾ cup butter (softened – regular or vegan)
  • ¾ cup light brown sugar
  • ¼ cup granulated sugar
  • 1 egg
  • ½ tablespoon vanilla extract
  • ¾ teaspoon salt
  • ¾ teaspoon baking soda
  • 2 cups + 2 tablespoons all-purpose flour
  • 1½ teaspoons ground cinnamon

For Cinnamon Sugar Coating:

  • ¼ cup granulated sugar
  • 1 teaspoon ground cinnamon

Optional Churro Buttercream Frosting:

  • ⅔ cup butter (softened – regular or vegan)
  • 2 cups powdered sugar
  • ½ cup light brown sugar
  • 1 teaspoon vanilla extract
  • 12 tablespoons milk (regular or dairy-free)
  • 1 tablespoon + 1 teaspoon ground cinnamon
  • ¼ teaspoon salt

Instructions

  1. Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. In a mixing bowl, beat softened butter with brown sugar and granulated sugar until fluffy.
  3. Add the egg and vanilla extract. Beat to combine.
  4. Add the flour, baking soda, salt, and cinnamon. Mix until just combined—do not overmix.
  5. Roll dough into 1½ tablespoon-sized balls.
  6. In a small bowl, mix together the cinnamon and sugar for coating.
  7. Roll each dough ball in the cinnamon sugar until evenly coated.
  8. Place the dough balls on the baking sheet and bake for 8–10 minutes, or until edges are set and centers are soft.
  9. Let cookies cool completely before adding frosting (if using).
  10. For the Frosting (Optional): Beat softened butter, powdered sugar, brown sugar, cinnamon, vanilla, and salt. Add milk gradually to reach desired consistency. Pipe or spread onto cooled cookies.

Notes

For a more churro-like texture, slightly underbake the cookies and let them finish setting on the baking sheet. Vegan versions can use plant-based butter and egg substitutes. These cookies freeze well.
