A quick and flavorful corn salad featuring crunchy Fritos, crisp vegetables, and a creamy dressing—perfect for BBQs, potlucks, or a weeknight side dish.
Ingredients

- 2 cans corn, drained (or 3 cups fresh/frozen corn)
- 1 cup shredded cheddar cheese
- 1/2 red onion, finely chopped
- 1 red bell pepper, diced
- 1 cup mayonnaise (or half mayo, half sour cream)
- 1 bag of Fritos (10–11 oz), crushed lightly
- Salt and pepper to taste
Instructions
- In a large bowl, combine corn, cheddar cheese, red onion, and bell pepper.
- Stir in mayonnaise until everything is evenly coated.
- Season with salt and pepper.
- Just before serving, fold in crushed Fritos to preserve crunch.
Notes
To keep the Fritos crunchy, add them just before serving. You can swap half the mayo for sour cream for a lighter flavor.
