- 2 tbsp butter
- 2 tbsp all-purpose flour
- 1½ cups milk or cream
- 1½ cups shredded cheese (cheddar, Monterey Jack, or queso blanco)
- ½ tsp chili powder
- ½ tsp garlic powder
- Optional: diced jalapeños
- Optional Toppings: Grilled onions, bell peppers, corn, black beans, guacamole, tortilla strips
Instructions
- Marinate the Steak: Combine olive oil, garlic, cumin, lime juice, salt, and pepper. Coat the steak and marinate for at least 30 minutes (overnight preferred).
- Cook the Rice: Prepare white rice according to package instructions. For added flavor, stir in chopped cilantro and lime juice once cooked.
- Sear the Steak: In a hot cast-iron skillet, sear the steak to your preferred doneness. Rest the meat, then slice thinly across the grain.
- Make the Queso Sauce: Melt butter in a saucepan. Whisk in flour to form a roux. Slowly add milk or cream, stirring until smooth. Stir in shredded cheese and spices. Cook until melted and creamy.
- Assemble the Bowl: In serving bowls, add a base of rice. Top with sliced steak and pour hot queso over. Add desired toppings.
