  • 2 ½ cups grated zucchini, gently press out excess moisture with hands

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Whisk together the flour, baking powder, baking soda, and salt in a medium bowl.
  3. In another large bowl, mix the light brown sugar, granulated sugar, and vegetable oil until well combined.
  4. Add the vanilla extract and eggs, one at a time, beating well after each addition.
  5. Gradually fold the dry ingredients into the wet mixture until just combined.
  6. Gently stir in the grated zucchini.
  7. Pour the batter into a greased loaf pan, smoothing out the top with a spatula.
  8. Bake for about 60 minutes, or until a toothpick inserted into the center comes out clean.
