- Add the vanilla extract and eggs, one at a time, beating well after each addition.
- Gradually fold the dry ingredients into the wet mixture until just combined.
- Gently stir in the grated zucchini.
- Pour the batter into a greased loaf pan, smoothing out the top with a spatula.
- Bake for about 60 minutes, or until a toothpick inserted into the center comes out clean.
