Ingredients

- 1 cup lentils
- 2 cups kale, chopped
- 1 onion, diced
- 2 carrots, diced
- 2 celery stalks, diced
- 4 garlic cloves, minced
- 6 cups vegetable broth
- 1 can (14.5 oz) diced tomatoes
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- Salt and pepper to taste
- Olive oil for sautéing
Instructions
- In a large pot, heat olive oil over medium heat. Sauté onion, carrots, and celery until the onion is translucent.
- Add garlic and cook for another minute.
- Stir in lentils, kale, diced tomatoes, vegetable broth, thyme, and rosemary.
- Bring to a boil, then reduce heat and let it simmer for about 25–30 minutes, or until lentils are tender.
- Season with salt and pepper to taste.
- Serve warm and enjoy!
Notes
Lentils are best if using brown or green varieties. Kale should be added towards the end of cooking to maintain its texture.
