  • 2 four-ounce bars (226g) semi-sweet or bittersweet chocolate, chopped
  • 5 tablespoons (71g) unsalted butter, softened
  • ¾ cup (150g) packed light brown sugar
  • ¼ cup (50g) granulated sugar
  • 2 large eggs, at room temperature
  • 1 teaspoon vanilla extract
  • ¾ cup (94g) all-purpose flour, spooned & leveled
  • ¼ cup (21g) natural unsweetened or Dutch-process cocoa powder
  • 1 teaspoon espresso powder
  • 1 teaspoon baking powder
  • ¼ teaspoon salt
  • Optional: ¾ cup (135g) semi-sweet chocolate chips

Instructions

  1. Melt Chocolate: Gently melt the chopped chocolate with the butter using a microwave or double boiler. Let cool slightly.
  2. Beat Eggs & Sugars: In a large bowl, beat the eggs, brown sugar, and granulated sugar on medium-high speed for 3–4 minutes until frothy and pale.
  3. Combine Wet Ingredients: Add the vanilla and cooled chocolate mixture to the egg-sugar mixture. Mix until fully combined.
  4. Mix Dry Ingredients: In a separate bowl, whisk together the flour, cocoa powder, espresso powder, baking powder, and salt.
  5. Combine Wet & Dry: Gradually mix the dry ingredients into the wet ingredients. Fold in the optional chocolate chips.
  6. Chill Dough: Cover and refrigerate the dough for 20–30 minutes.
  7. Preheat & Scoop: Preheat oven to 350°F (177°C). Line baking sheets with parchment paper. Scoop 1.5–2 tbsp of dough per cookie, placing 3 inches apart.
  8. Bake: Bake for 10–12 minutes or until edges are set. The centers will appear soft but will continue to set as they cool.
  9. Cool: Let the cookies cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.

Notes

For extra gooey centers, slightly underbake and allow cookies to rest on the tray. Adding espresso powder enhances chocolate flavor without tasting like coffee.
