These pillowy, sweet beignets are a delightful treat, perfect for brunch or a midnight snack, coated in powdered sugar.
Ingredients

- 2 cups all-purpose flour
- 1/2 cup sugar
- 1 packet (2 1/4 teaspoons) active dry yeast
- 1/2 cup milk, warmed
- 2 large eggs
- 1/4 cup butter, melted
- 1 teaspoon vanilla extract
- 1/2 teaspoon salt
- Oil for frying
- Powdered sugar for dusting
Instructions
- In a small bowl, combine warm milk and yeast. Let sit for 5 minutes until foamy.
- In a large bowl, mix flour, sugar, and salt. Make a well in the center.
- Add the yeast mixture, eggs, melted butter, and vanilla to the well. Mix until combined.
- Knead the dough on a floured surface until smooth, about 5 minutes.
- Place the dough in a greased bowl, cover, and let rise in a warm place for about 1 hour or until doubled in size.
- Roll out the dough on a floured surface to about 1/4 inch thick. Cut into squares.
- Heat oil in a deep fryer or large pot to 350°F (175°C). Fry beignets until golden brown, about 2-3 minutes per side.
- Remove from oil and drain on paper towels. Dust with powdered sugar before serving.
Notes
Keep the oil hot but not smoking. Adjust heat if dough browns too fast. For best results, toss beignets in sugar while still warm.
