Ingredients

  • 2 cups all-purpose flour
  • 1/4 cup granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground cinnamon
  • 2 large eggs
  • 1/2 cup whole milk
  • 1 teaspoon pure vanilla extract
  • 1/4 cup unsalted butter, melted
  • Vegetable oil, for frying
  • Powdered sugar, for dusting

Instructions

  1. In a large mixing bowl, combine the flour, granulated sugar, baking powder, salt, and ground cinnamon. Whisk until well blended.
  2. In a separate bowl, whisk the eggs lightly, then add the milk and vanilla extract, mixing until combined.
  3. Pour the wet ingredients into the dry ingredients and gently fold together until just incorporated.
  4. Add the melted butter and fold it in gently.
  5. Cover the bowl with plastic wrap or a towel and let the dough rest for about 30 minutes.
  6. Heat vegetable oil in a pot over medium heat until it reaches 350°F (175°C).
  7. Drop spoonfuls of dough into the hot oil and fry until golden brown, about 2-3 minutes per side.
  8. Remove beignets with a slotted spoon and place on paper towels to drain excess oil.
  9. Dust the warm beignets with powdered sugar before serving.
  10. Serve immediately with dipping sauces, if desired.
