Description

This vanilla peach butter is rich, smooth, and fragrant with real vanilla beans. A perfect summer preserve to enjoy on toast, biscuits, or yogurt.

  • 9 cups sliced ripe peaches (seeded but not peeled)
  • 1/4 cup water
  • 2¼ cups granulated sugar
  • ¾ cup honey
  • 2 vanilla beans, seeds scraped (or 2 tsp vanilla bean paste)

Instructions

  1. Cook the peaches: In a large pot, combine sliced peaches and water. Bring to a boil, then reduce heat and simmer, covered, for 10–15 minutes until peaches are soft.
  2. Blend: Remove from heat, let cool slightly, then puree the mixture in a blender or food processor until smooth.
  3. Simmer with sweeteners: Return the peach puree to the pot. Stir in the sugar, honey, vanilla bean seeds, and the empty pods. Bring to a boil, then reduce heat and simmer uncovered for about 60 minutes, stirring often, until the mixture thickens and mounds on a spoon.
  4. Prepare for storage: Remove vanilla pods. Ladle the hot peach butter into sterilized jars, leaving ¼ inch headspace.
  5. Process (if canning): Wipe jar rims, place lids, and process in a boiling water bath for 5 minutes.
  6. Cool and store: Let jars cool on wire racks. Store sealed jars in a cool, dark place for up to 1 year. Refrigerate after opening.

Notes

For best results, use very ripe peaches. The vanilla intensifies the flavor beautifully. You can reduce the sugar slightly for a more fruit-forward spread.
