Ingredients
2 sheets of puff pastry
30g caster sugar
2 heaped teaspoons ground cinnamon
4 large apples
Dairy-free milk (for brushing)
Vegan caramel sauce (optional)

Instructions
Preheat your oven to 200°C (400°F).
Peel, core, and chop the apples into small pieces. In a mixing bowl, combine the chopped apples, caster sugar, and ground cinnamon. Toss to coat the apples evenly.
Dust your work surface with flour and roll out the puff pastry sheets, cutting them into squares or rectangles, about 10cm (4 inches) on each side.
Place a generous spoonful of the apple mixture in the center of each pastry square and drizzle with vegan caramel sauce if desired.
Fold the pastry over the filling and press the edges together. Crimp around the edges with a fork to seal.
Place the filled pastries on a lined baking tray and brush the tops with dairy-free milk.
Bake in the preheated oven for about 20-25 minutes, or until puffed and golden.
Allow to cool for a few minutes before serving. Drizzle with additional vegan caramel sauce if desired.
