Delightful Vegan Caramel Apple Pastries made with crispy puff pastry, sweet apples, and rich vegan caramel – perfect for a cozy dessert or snack.

- 2 sheets of puff pastry
- 30g caster / granulated sugar
- 2 heaped teaspoons ground cinnamon
- 4 large apples
- Dairy-free milk
- Vegan caramel sauce (optional)
Instructions
- Preheat your oven to 200°C (400°F).
- Peel, core, and slice the apples into thin pieces.
- In a bowl, mix the caster sugar and ground cinnamon together.
- Toss the sliced apples in the cinnamon-sugar mixture until well coated.
- Roll out the puff pastry sheets on a lightly floured surface and cut each into squares or rectangles.
- Place a spoonful of the cinnamon-coated apples in the center of each pastry square.
- Fold the pastry over the apples to create a pocket and press the edges to seal.
- Brush the tops of the pastries with a little dairy-free milk for a golden color.
- Bake on a baking tray lined with parchment paper for 20-25 minutes or until golden brown.
- If desired, drizzle with vegan caramel sauce after cooling slightly.
Notes
Best served warm. Pair with dairy-free ice cream or whipped coconut cream. Store leftovers in an airtight container for up to 2 days at room temperature or up to a week in the fridge.
