Ingredients

  • 1 cup dried lentils
  • 1 can coconut milk
  • 1 can diced tomatoes
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 tablespoon curry powder
  • 1 teaspoon cumin
  • 1 teaspoon turmeric
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. Rinse and sort the lentils, then place them in the crockpot.
  2. Add the diced onion, minced garlic, coconut milk, diced tomatoes, curry powder, cumin, turmeric, salt, and pepper.
  3. Stir to combine all ingredients well.
  4. Cook on low for 360-480 minutes or high for 180-240 minutes, until the lentils are tender.
  5. Serve hot, garnished with fresh cilantro.

Notes

For a creamier curry, use red lentils or add additional coconut milk. To enhance flavors, toast spices before adding them.
